HELL'S KITCHEN

Hell's Kitchen has been one of the most successful TV cooking hits, giving viewers and contestants a look at what is required to be a top chef in a busy restaurant.

With the help of our chef, XSEM will allow guests to experience the intense pressure of a fully working kitchen. guests will work in teams to create a gourmet dish, implementing skills they have learnt during the day.

XSEM is proud to present an event that will allow guests the opportunity to learn new skills in a fun environment whilst promoting teamwork under pressure. The whole day will unfold in the breathtaking setting of 14th century Hospitium set in the museum gardens.

Guests will arrive mid morning where they will drop off their luggage and relax in style in the Hotel Du Vin, York's premier boutique hotel.

At midday guests will be collected by coach and transferred to The Hospitium for the morning's activity. Once at the venue guests will be divided up into teams for the afternoons cooking. During the afternoon guests will create and enjoy a fabulous 3 course meal with wine. (see Hell's Kitchen itinerary)

Post meal guests will be transferred back to the hotel where they will have the opportunity to freshen up before the transfer to the recently refurbished Kennedy's Café Bar for a fully managed Nintendo wii evening.

The private room in Kennedy's is perfectly equipped for an evening of fun with it's own private bar and buffet facility. Following the evenings competitions consultants will be in the center of town should they wish to continue the evenings drinking.

The following morning guests are treated to breakfast and are free to enjoy the hotel facilities before departing at their leisure.

PROVISIONAL ITINERARY

11.00 Guests will be asked to store their bags, however we will arrange for them to be taken to their rooms once available.
11.30 Coach transfer to The Hospitium.
11.45 Guests will arrive at The Hospitium where they will be divided into teams for Hell's Kitchen. Coffee and pastries served with full health and safety briefing.
12.00 Chef Stein will demonstrate first course.
13.15 First group will prepare starter.
14.05 Chef Stein will demonstrate second course.
14.45 Second group will prepare main course.
15.35 Chef Stein to demonstrate dessert.
16.00 Third group to prepare dessert.
17.15 Award ceremony for best individual chef in each group.
17.30 Coach transfer to Hotel Du Vin Free time to relax.
19.30 Coach transfer to Kennedy's Café Bar.
20.00 Nintendo wii evening.
22.30 Awards ceremony.
22.30 Guests are free to relax in bar or move onto a pre arranged bar on request.

HELL'S KITCHEN

The Hell's Kitchen afternoon is a fantastic experience that will enable guests to experience all the pressure of a working kitchen under the guidance of our head Chef.

Guests will be split into 3 teams to learn all the skills required to prepare a fine 3 course meal. Each team prepare, cook and serve a course to fellow colleagues under guidance of chef Stein Smart, trained by Jean Christophe Novelli and Gary Rhodes.

When guests are not in kitchen they will be relaxing at their tables waiting to receive the dish carefully prepared by the team in the kitchen. Guests will all mark the dishes they eat in this competitive format. An overall prize will also be given to the top chef from each group.

The full day will include all food, 15 bottles of specially selected fine wines to compliment menu, aprons, note pads, pens and goodie bags along teas/coffees/mineral water.

2-3 bottles of fine wines will be served per table per course, we will have a wine expert on hand to give a small talk. Mineral water, teas & coffees served as required.

ITINERARY

12.00 Meet & Greet with coffee & croissants, goodie bag with apron to keep along with samples, recipe CD and details of suppliers etc. Chef will introduce himself and team (of 4), and explain the days events along with a health & safety briefing. 3 equal groups will be decided along with status within group, i.e Head Chefs, Sous Chefs, etc.
12.50 Chef Stein will demo first course.
13.15 First team/group will prepare and cook first course under pressure as in a real kitchen situation. Chef Stein will oversee and ensure every kitchen member is working hard and ensuring dishes are ready for service within a set time limit. A designated Matre'D will be responsible for service and will have to organise other group members to take orders and serve on time and check presentation.
14.05 Chef Stein will demo second course to second team/group.
14.45 Second team/group will prepare and cook second course under pressure as in a real kitchen situation. Chef Stein will oversee and ensure every kitchen member is working hard and ensuring dishes are ready for service within a set time limit. A designated Matre'D will be responsible for service and will have to organise other group members to take orders and serve on time and check presentation.
15.35 Chef Stein will demo dessert course to third team/group., including sugar art to dress desserts.
16.00 Third team/group will prepare and cook dessert course under pressure as in a real kitchen situation. Chef Stein will oversee and ensure every kitchen member is working hard and ensuring dishes are ready for service within a set time limit. A designated Matre'D will be responsible for service and will have to organise other group members to take orders and serve on time and check presentation.
17.15 Chef Stein and his team will present the best group or individuals with 3 bottles of champagne to celebrate their skills and input into their cooking.

HOTEL DU VIN - YORK
